One pot spicy Southern sausage rice

I’m all about putting a home-cooked meal on the table. It’s totally worth it when the family gets to sit down together and enjoy a meal together. It’s so much more special than plopping down a bucket of KFC. If there’s one thing I hate about it, though, it's the cleanup. Even though everyone pitches in, I still hate leaving the table to clean a boatload of dishes (not to mention a stovetop packed with a bunch of pots and pans). One pot meals like the recipe below are definitely a game changer. They motivate me to cook so much more often!
This quick-and-easy recipe will get dinner on the table in less than an hour. Feel free to change up the ingredients based on what you have handy. If you have bulk sausage instead of link sausage, go for it! No chicken broth? Substitute water (or instant bouillon, which I love keeping on hand for these occasions).

One pot spicy Southern sausage rice

1 tablespoon extra virgin olive oil
1 pound andouille sausage, cut into small coins
1 small yellow onion, small diced
1 red bell pepper, small diced
1 jalepeno pepper, seeded and minced
2 cloves garlic, minced
2 tablespoons Italian seasoning
1/4 teaspoon red pepper flakes
1 14 ounce can diced tomatoes
1 1/2 cups jasmine rice
2 1/2 cups chicken broth
1 bunch parsley, roughly chopped
In a large non-stick skillet, heat the oil over medium-high heat. Add the andouille sausage and cook until browned all the way through.
Add the onion, red bell pepper, jalapeno pepper, garlic, Italian seasoning, and red pepper flakes. Cook until the vegetables have softened, about 5 minutes.
Add the undrained can of diced tomatoes, rice, and chicken broth. Stir and allow the mixture to come to a boil. Reduce the heat and simmer until the liquid level reduces enough so it is below the rice, about 5 minutes.
Reduce the heat to low and cover, cooking for 15-20 minutes until the rice is fully cooked.
Garnish the rice with parsley and salt and serve hot.
