Low Carb Smoked Turkey Cucumber Sandwich
2-4 large cucumbers
4 oz log goat cheese
1 tsp dried dill
1/2 tsp fresh thyme
1/2 tsp lemon juice
9 oz smoked turkey
Pepper to taste
Cut off the ends of the cucumbers.
Slice them a quarter of an inch thick length wise so that it is like the bread of a submarine sandwich.
In a bowl mix together goat cheese, dill, thyme, lemon, and pepper.
Spread cheese mixture on the bottom of cucumber slice.
Layer turkey on top of cheese mixture.
Top with another cucumber slice.
Repeat until you use all of your ingredients.
Pro tip: You can use cream cheese if goat cheese is too strong for you.
