Turkey Taco Lettuce Wrap

1.5 pounds of lean ground turkey
1 teaspoon cumin
1 tablespoon olive oil
1/2 teaspoon coriander
1 teaspoon chili powder
1 teaspoon paprika
6 cloves garlic, minced
1 small yellow onion, small diced
1 cup small diced tomatoes
12 large lettuce leaves, iceberg or romaine
1/4 cup of freshly chopped cilantro
1/2 lime, juiced
1/4 cup of water
Salt and pepper to taste
Cook olive oil and turkey in a large pan on high heat for 5-8 minutes.
Add in salt and pepper to taste.
Add in garlic and onion, cook for another 3-4 minutes until onions are tender.
Add in cumin, coriander, chili powder, paprika, cook for another 1-2 minutes.
Add in tomatoes and 1/4 cup of water.
Adjust heat to medium low and allow to simmer for 3- 5 minutes.
Add in cilantro and lime juice, mix well.
Turn off the heat.
Serve by dividing turkey evenly into the lettuce cups.
Pro-tip: If you are feeling fancy, add cheese as a topping.
