7 healthy sandwiches that you can make for lunch that are so much better than PB&J

Is there anything more beautiful than a good sandwich? As a bread lover, I insist that there is no such thing. The unfortunate thing about sandwiches is that it's too easy to make them a little too unhealthy. Fortunately, I've gathered a few healthier sandwiches you can eat (mostly) guilt-free.
Relying on natural ingredients and spices to enhance the flavor, and cutting back on additives (and sometimes the bread), is a simple way to make your favorite lunch a welcome guest again.

1. Hummus and roasted red pepper
The most challenging part of this sandwich is chopping up your peppers and tossing them in the oven to cook (which you can do ahead of time). The creamy sandwich is perfect when you want to squeeze in a few extra veggies too.
2. Blackberry bacon grilled cheese (h/t Lemon Tree Dwelling)
If you're going to go with bread, might as well make it sourdough. The fermentation process makes it a healthier option than some others. Add some blackberry jam, cheese, and a little bacon to create the perfect bite.
3. Baked eggplant sandwiches (h/t The Iron You)
At just over 100 calories per sandwich, this low-carb, low-cal is the perfect bite of guilt-free sandwichness. The natural flavors of the parsley, tomatoes, cheese, and eggplant work well, and the crusted parmesan adds a much-needed crunch.
4. Open-faced egg avocado hash (h/t Recipe Runner)
Runny egg leaking all over tomato, avocado, and an English muffin is pretty much the stuff from which dreams are made. At just over 300 calories (and 11 grams of protein), this is the perfect get-up-and-go breakfast dish.
5. Vegetarian French dip
The classic French dip sandwich is all about slow roasted beef dipped in a savory beef au jus. There's nothing vegetarian about that! But, since I've been cooking more vegetarian meals at home, my husband has really missed those meaty flavors. Get the full recipe here.
6. Warm eggplant and goat cheese sandwich (h/t Health)
This sandwich serves two, so it's perfect for lunch with your significant other or a friend. Tomato, arugula, eggplant, and goat cheese work well to create the perfect guilt-free quick meal.
7. Peanut butter and peach grilled sandwich (h/t Halfbaked Harvest)
It sounds odd, but give this one a chance. The saltiness of the peanut butter paired with the sweetness of the peaches is near perfection. Add savory notes of garlic, pepper, chili powder, and oregano, and you have the perfect late-night snack.
