Hemp seeds are a vegan superfood: rich in all three omega-3 fatty acids, these flavorful, earthy seeds are the base of these burgers, along with black beans, cashews, and a hint of spice. Combined with some fresh cilantro and spices, the recipe below is perfect for a vegan dinner party or barbecue.
Some veggie burgers use breadcrumbs to hold them together, but this recipe uses oats instead, making it safe to serve to your gluten-free friends.

2 tablespoons olive oil, divided
1 red onion, finely chopped
3/4 cup cashews
1/4 cup hemp seeds
2 cloves garlic, minced
2 teaspoons cumin
1 teaspoon smoked paprika
1/2 teaspoon cayenne pepper
1 16-ounce can black beans
1 cup cilantro, chopped
1/2 cup oat bran
6 hamburger buns
Preheat the oven to 400 degrees.
Heat one tablespoon of the oil in a pan and add the onion. Sauté until soft, about 5 minutes.
Add the nuts, hemp seeds, garlic, and spices to a food processor. Blend until relatively smooth, then add the beans and pulse until combined but still slightly chunky. Add the cilantro and blend until smooth.
Combine the onion and the bean mixture and stir in the oats. Form six burger patties, and brush each on both sides with olive oil.
Bake for 20 minutes, until cooked through. Toast the buns and serve the burgers.
