I try to stay away from a lot of red meat, but there's one dish I just simply can't avoid: the patty melt. It's not so much about the beef patty (although I love the smashed griddled patty better than a burger patty). It's definitely not about the bread because I'm trying to avoid that with my low carb diet, anyway. It's all about the sauce, and the recipe below certainly delivers on that.
We substitute Greek yogurt for the classic mayonnaise-based patty melt sauce, and you'll never tell the difference. It's so delicious I could eat it plain! Then, we chose thinly sliced bread will help lower our carb counts. If you're really watching the carbs, only use one piece of bread and enjoy this delicious low carb patty melt open-faced. I bet you could even use cauliflower bread for this recipe! If you do, let us know how it turns out!

Low carb patty melt

2 tablespoons Greek yogurt
2 tablespoons ketchup
1 tablespoon chopped dill pickles
Dash Worcestershire sauce
1 tablespoon extra virgin olive oil
1 medium yellow onion, thinly sliced
1 pound grass fed ground beef
1 teaspoon onion powder
1 teaspoon garlic powder
1/2 teaspoon kosher salt
4 slices pepperjack
8 slices thinly sliced bread
To make the sauce, combine the Greek yogurt, ketchup, chopped pickles, and Worcestershire sauce in a small bowl. Set aside.
Meanwhile, heat the olive oil in a large skillet over medium-high heat. Add the onions and cook until they are soft and caramelized, about 15 minutes.
Remove the onions from the skillet and set aside.
In a small bowl, combine the beef, onion powder, garlic powder, and salt and mix until well combined.
Form the beef into 4 thin patties.
Heat the large skillet over medium heat and add the beef patties. Cook them for 5 minutes, until browned, and flip them over. Cook them for an additional 3 minutes, until mostly cooked through.
Add the onions and cheese and cover the skillet with a lid. Cook for an additional 2 minutes, until the cheese is melted.
Meanwhile, toast the bread slices and spread 1/2 tablespoon of sauce on each slice.
Top the bread slices with the beef patty.
