I've made cauliflower bread, I've used an egg patty as a bread replacement, I've tried it all. The recipe below is 100 percent, absolutely the best and most innovative solution I've tried yet. Using pickles as the "bread" for my sandwich is completely brilliant!
I love the flavor of pickles on my sandwich, so why not hollow out some quality kosher dill pickles and use them as a vehicle for my toppings? The best part about this is you can put any condiments in your pickle "bun" and fill them with any flavors you like. We made a classic roast beef sandwich (because I love beef and pickles!) but you substitute your favorite cold cuts and deli meats. I bet this would make a killer tuna salad sandwich!

Pickle sub sandwich (low carb)

2 large whole pickles
1 tablespoon mayonnaise
1/4 teaspoon horseradish
4 slices roast beef
1 small tomato, thinly sliced
Slice the pickles lengthwise and, using a spoon, gently scoop out the insides.
In a small bowl, combine the mayonnaise and the horseradish.
Spread the horseradish sauce on the top and the bottom of the pickle "bun."
Top the bottom "bun" with 2 slices of roast beef and 3 slices of tomato.
Place the top "bun" on top of the tomatoes and serve.
