Going low-carb doesn't mean giving up on your favorite foods. These mini tuna melts are to die for!

As healthy a lifestyle it is, going low-carb does sometimes mean giving up some old favorites. For me, one of the hardest foods to cut out for a little while are sandwiches. I love a good sandwich, and sometimes when I need ultimate comfort food, the one I turn to is the tuna melt. I've been on this low carb kick for a little while and when I couldn't keep my craving at bay anymore, I tried out the recipe below.
It's all there is to love about tuna melt sandwiches, without any of that carb-heavy bread. And as it turns out, you don't really need bread to enjoy a good tuna melt. Just throw all the ingredients needed to make one (minus the bread) into a big bowl and then portion it out into muffin cups. Throw them all into the oven and about 30 minutes later, you'll be serving up that craving. These are so good, and so easy!

Mini tuna melts
Serving: 6
Prep time: 5 minutes
Cook time: 30 minutes
Total time: 35 minutes
Ingredients
1 can tuna, drained
1/4 cup red onion, finely chopped
2 eggs
1/2 cup plain yogurt
1 1/2 cups Parmesan cheese, grated
1 teaspoon fresh parsley, finely chopped
1 teaspoon salt
1/2 teaspoon ground black pepper
Directions
Preheat the oven to 350 degrees Fahrenheit and generously spray a muffin tin with non-stick cooking spray.

Add all ingredients into a large bowl and mix to incorporate all ingredients.

Place about 1/4 cup of the mixture into each muffin tin. Continue doing with rest of the mixture until the entire tin has been filled.

Place the muffin tin into the preheated oven and bake for about 30 minutes, or until the tops are golden. Remove from oven and enjoy!
