Maple candied bacon

If you've ever dragged your bacon through a puddle of maple syrup from a pancake stack, you know the pleasure that this combo of sweet and salty can bring. In the recipe below, bacon is baked with maple syrup for a version of this perfect bite you can include in sandwiches, on salads, or just as a simple snack!
Choose good-quality maple syrup to make sure that you get the best maple flavor in this dish, and make sure you bake your bacon long enough so that it's crispy: it'll be less fatty that way and thus less overwhelming.

Maple-Glazed Bacon

1 pound bacon
1/3 cup maple syrup
1/3 cup brown sugar
1/2 teaspoon ancho chile powder
Preheat the oven to 400 degrees F.
Place the bacon on a rack placed over an aluminum-foil covered baking sheet. Brush with maple syrup and sprinkle with about half the brown sugar. Bake for about 15 minutes.
Carefully flip the bacon over and coat the other side with maple syrup and brown sugar. Return to the oven and bake for an additional 15 minutes, or until very crisp.
Remove from the oven and sprinkle with ancho chile powder. Set aside to cool. Serve warm, not hot.
