For a while, I got really into the avocado toast craze. I mean, really into it. I was eating avocado toast almost every day! It got to the point where I was a little bit burnt out on avocado by itself. I really enjoyed adding some healthy fats into my diet, so I had to figure out a way to spice things up. The recipe below definitely delivered - by combining creamy mashed avocado with nutty, textured chickpeas and salty feta, I had found my new favorite go-to meal!
This recipe is something of a mashup between hummus and guacamole, which makes it nice and versatile. I've turned it into everything from a sandwich spread to an appetizer dip served with tortilla chips to my favorite breakfast (that toast!). My favorite way to eat it recently is wrapped up in a flour tortilla with some crunchy cucumbers, spicy arugula, and juicy tomatoes.

Chickpea avocado mash with feta

1 (15 ounce) can chickpeas, drained and rinsed
1 ripe avocado
1/4 cup crumbled feta cheese
1 clove garlic, minced
1 shallot, minced
1 tablespoon lemon juice
1/4 teaspoon salt
1/8 teaspoon freshly ground pepper
Place the chickpeas in the food processor and pulse until they are roughly mashed.
Add the remaining ingredients and pulse to combine.
Serve on toast, in a tortilla wrap, or with a side of chips.
