I've really been into quinoa recently. It's a great way to get a full serving of protein for vegetarians because it's a complete protein. That means it has all the essential amino acids your body needs, just like meat. In addition to all the great protein, it also tastes pretty fantastic with its earthy, nutty flavor! The recipe below really brings it all together with sweet, crisp flavor from the apples and the tart chewiness from the cranberries to really represent fall flavors. Add in some juicy grapes and fresh bell peppers, and you have a recipe for success!
This salad is a great way to get your full serving of vegetables for the day while keeping you feeling full from all the protein. Serve a smaller portion as a side salad to go alongside your main, or bulk up the portion and serve it as the main event. I've even had this salad for breakfast - the flavors totally work!

Cranberry apple quinoa salad

2 cups quinoa, cooked and cooled
1 small shallot, finely chopped
1 green apple, diced
1 red bell pepper, diced
1 cup red grapes, cut in half
1/4 cup dried cranberries
1/4 cup slivered almonds
1/2 teaspoon whole grain mustard
1 tablespoon lemon juice
3 tablespoons olive oil
Salt and pepper to taste
1 cup chopped chickpeas
In a large bowl, combine the quinoa, shallot, apple, bell pepper, grapes, cranberries, and almonds.
In a small bowl, whisk together the mustard, lemon juice, and olive oil until they are well combined.
Pour the dressing over the quinoa mixture and toss to coat.
Season with salt and pepper to taste.
Add in 1 cup of chopped chickpeas
Serve!
