Roasted brown butter honey garlic carrots

It's just as easy as any other roasted carrot recipe you've ever tried, but brings with it the sweet taste of honey and the mellow flavor of roasted garlic. And you can do everything all in the same pot, which makes for easy cleanup and less prep time.
I've tried other honey garlic carrot recipes but have found that the honey always burns so quickly, making a mess of my carrots and my pan. The trick to avoiding all of that? Just roast the carrots and garlic together and then drizzle the honey over them just before serving. You won't get that bitter burnt taste, and your pan will remain intact. That's what I call a pretty sweet recipe!

Roasted Brown Butter Honey Garlic Carrots

2 pounds carrots, peeled and cut into 2-inch pieces
6 garlic cloves, smashed
1 teaspoon salt
1/2 teaspoon ground black pepper
1/2 cup cubed butter
3 tablespoons honey
3 tablespoons parsley, finely chopped
Preheat the oven to 425 degrees Fahrenheit. Place carrots and garlic cloves in your baking dish or oven-proof skillet, and season with salt and pepper. Toss to mix. Add butter to the dish and place the roasting dish into the oven.
Cook for 45-50 minutes.
Remove carrots from the oven and stir to redistribute the browned butter. Drizzle honey over top and sprinkle with parsley for garnish.
