Sometimes it seems easier to fall into a routine than to make a crazy, extravagant low-carb dinner! The recipe below was eye-opening for me: sometimes, a new and exciting dinner can be as easy as a twist on an old favorite.
All you need to make this super easy, low-carb chicken fritters recipe is shredded chicken. If you're like me and have slow cooker shredded chicken on hand as a high-protein snack, that will be no problem! Whip these up as an appetizer or a snack, or serve them with a dipping sauce alongside a nice salad for dinner.

Low carb chicken fritters

1 pound shredded chicken breast
3 large eggs
2 tablespoons Dijon mustard
1 cup shredded mozzarella
1/4 teaspoon salt
1/8 teaspoon black pepper
1 tablespoon chopped fresh dill
2 tablespoons canola oil
In a large mixing bowl, combine all of the ingredients (except the oil).
In a large cast iron skillet or nonstick pan, heat the canola oil over medium-high heat.
Add the chicken mixture a heaping tablespoon at a time, flattening them with the back of the spoon when they hit the pan.
Cook for 4 minutes before flipping, cooking for an additional 2 minutes on the second side.
Serve with your favorite dipping sauce.
