Zero carb boneless buffalo wings

If you closed your eyes and took a bite of the recipe below, you would never know that they were low carb. Seriously - these boneless buffalo wings totally taste restaurant quality, but they're actually healthy. That's great news, because I always feel guilty when I don't serve some version of buffalo wings at my Superbowl parties!
It might seem weird to use pork rinds and parmesan cheese as the breading for these zero carb boneless buffalo wings. If you've never tried it before, I don't blame you for being skeptical! I would encourage you to give it a try, though, because it absolutely creates the perfect crunchy exterior for this tasty appetizer. We would love to know what you think after you make this recipe.

Zero carb boneless buffalo wings

1 pound boneless, skinless chicken breasts
1 (3.75 ounce bag) pork rinds
1/2 cup shredded parmesan cheese
1 egg, beaten
2 tablespoons heavy whipping cream
1/3 cup Franks buffalo sauce
1/3 cup ghee
Preheat the oven to 400 degrees F. Spray a baking sheet with nonstick cooking spray and set aside.
Using a sharp knife, slice the chicken breasts into bite-sized pieces and set aside.
In a food processor, combine the pork rinds and parmesan cheese. Process until the mixture turns into a fine powder. Place the mixture on a plate.
In a small bowl, beat the egg and cream until they are well combined.
Dip the chicken pieces into the egg mixture before pressing them into the pork rind mixture. Place the breaded chicken pieces on the baking sheet.
Bake the chicken for 10-15 minutes, until golden brown and cooked through. If they are not crispy enough, turn on the broiler and cook for an additional 2 minutes.
Meanwhile, heat the Franks hot sauce and ghee in a small saucepan.
Using tongs, dip each boneless buffalo bite into the heated hot sauce.
Serve warm
