The creamy avocado is a new favorite on my fruit list (yup, it's a fruit. Actually, it's a berry.) Speaking of which, did you know that fruit is defined as the mature ovary of a flower? Yikes. Glad they don't print that on the label. The delicious fruit is packed full of heart-healthy fats and some 20+ nutrients and minerals. If you're not regularly adding avocado to the menu, you might want to start.

1. Avocado chicken salad wraps (h/t Whole and Heavenly Oven)
This low-carb recipe skips the fatty mayo and uses avocado for moisture and flavor. You won't even miss the tortillas of a traditional wrap. The recipe makes eight servings, and each serving only has 114 calories.
2. Chocolate cupcake with avocado frosting (h/t Love and Lemons)
When I think of cupcakes, avocados are not usually the first topping I consider. But, this tasty recipe ditches the butter and sugar and opts for Agave and avocado to create the perfect creamy frosting texture.
3. Chicken and avocado enchiladas (h/t Gimme Some Oven)
This is the perfect recipe to highlight the avocado. The coolness in the avocado cream sauce will help ease some of the heat from the poblano and jalapeno peppers.
4. Baked egg in avocado (h/t Bravo for Paleo)
This paleo-friendly recipe is a great option when you're running late in the morning. It takes about 2 minutes to prep. Then toss it in the oven and let it bake while you finish getting ready for work.
5. Avocado, strawberry, and goat cheese sandwich (h/t Edible Perspective)
The avocado is getting cozy with its fruit-family in this unique sandwich. A hit of lemon juice and sea salt, help counter the sweetness in the strawberries. Make sure to toast the bread first, so the berries don't make your lunch soggy!
6. Salmon avocado boat
I've said it before, and I'll say it again - I can only eat so many eggs on this low-carb, Keto diet. Sometimes I feel like Bill Murray in Groundhog's Day and every day starts with a scrambled or fried egg. They're a great source of protein and healthy fats, but isn't there another way? Why yes, there is! Get the full recipe here.
7. Avocado spaghetti (h/t The Londoner)
Spaghetti is a food of the gods, and this recipe does not disappoint. The creamy sauce adds lots of flavor and healthy fats to your dish. Try with a side salad or (my preference) garlic bread.
8. Avocado deviled eggs
Deviled eggs are always the first thing to disappear from a picnic or party spread. I swear it happens every time I serve them. The recipe below adds a fresh new twist to the classic midday party dish. These are sure to disappear even faster than the traditional. Get the full recipe here.
