Anyone who's ever had the pleasure of enjoying Peking duck knows just how scrumptious and delicious it is. It's a little sweet, a little salty, typically involves a delicious sauce, and also has that delightfully crispy skin that, let's face it, is really the best part of it all. And now, thanks to the recipe below, you can enjoy it all in sandwich form. And you don't even have to make an entire Peking duck to do it.
This recipe simply takes all those delicious flavors and packs them in between two layers of soft bread before covering it all with cheese that will melt over the entire thing. Peking duck in a grilled cheese sandwich? Now you've seen it all. And it's time to make it, so you can taste it all too!

Peking duck grilled cheese
1 sandwich

2 thick slices of soft white bread
1 tablespoon butter, softened
2 teaspoons mayonnaise
1 tablespoon chives, finely chopped
2 teaspoons hoisin sauce
1/8 teaspoon five spice powder
4 slices Swiss cheese
3/4 cup cooked duck, sliced thinly with crispy skin still on
4 thin cucumber slices
4 thin radish slices
Butter one side of each piece of bread with butter. In a small bowl combine the mayonnaise, chives, hoisin sauce, and five spice powder. Spread this mixture thinly over the other side of the bread.
Place one of the bread slices, butter-side down, into a skillet set over medium-low heat. Top with two slices of cheese, the duck, cucumber and radish slices. Lay two pieces of Swiss cheese over the duck and vegetables and place the other slice of bread, butter-side up, on top.
Cook the sandwich for about 5 minutes, just until the cheese begins to melt and the sandwich is browned on one side. Then gently flip and cook for another 3 or 4 minutes, until that side is also golden brown and the cheese on the other side has started to melt. Remove from heat and let sit for about 5 minutes before slicing and serving.
