1 medium head cauliflower, stalk removed, broken into florets
1/2 cup shredded mozzarella
1/4 cup grated Parmesan cheese
2 eggs, lightly beaten
1/2 teaspoon garlic powder
1/4 cup marinara sauce
1 tablespoon yellow mustard
1 cup cheddar cheese
2 slices American cheese, torn into 4 pieces
1 cup cooked ground beef
4 slices bacon, chopped and cooked until crisp
1 small red onion, thinly sliced
1 roma tomato, thinly sliced
Bread and butter pickle slices
Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper and set aside.
Place the cauliflower in a food processor and pulse until it resembles rice.
Fill a large pot with water and bring it to a boil. Place the riced cauliflower in a fine mesh strainer and place it above the boiling water. Steam for 5 minutes, until tender.
Place the riced cauliflower in a clean dishtowel and squeeze out all the excess moisture. Set aside to cool.
In a large bowl, combine the cauliflower, mozzarella, Parmesan cheese, eggs and garlic powder. Mix well.
Transfer the mixture to the prepared baking sheet and spread it into a circle to resemble pizza crust. Bake for 20 minutes.
Top the crust with the marinara sauce, yellow mustard, cheddar cheese and American cheese.
Evenly distribute the ground beef and bacon on top of the cheese and bake for 10 minutes, until the cheese is melted.
Top with thinly sliced onions, tomatoes and dill pickles.
Slice into 6 pieces and serve.
