1. Carbonara with squash and pancetta (h/t Laura in the Kitchen)
Pancetta, creamy sauce and squash go so well together, and make the perfect accompaniment to pasta. The video makes great watching too, and you'll be itching to cook once you've seen it!
2. Wild rice, squash and mushroom vegetarian buddha bowl
It seems as if wild rice is kind of the forgotten stepchild of the whole-grain world. It rarely appeared on my dinner table until I started making the healthy Buddha bowl recipe below. This dish reminded me of just how tasty wild rice is, and what a nice change it is from the usual brown rice or quinoa. Get the full recipe here.
3. Squash risotto
There's a lot to love about risotto. One of them is that you get to put just about whatever you want in it -- including butternut squash. When you cook it in the slow cooker, as in the recipe that follows, the squash becomes super tender, perfectly complementing the tender rice. Get the full recipe here.
4. Chicken with mushrooms and butternut squash (h/t The Forked Spoon)
Chicken, mushroom and squash are real flavor-buddies, and when simmered in a creamy, herby broth, they're even happier together. A truly comforting dish, this is perfect to warm and soothe on a cold day!
5. Spaghetti squash chicken parmesan (h/t Damn Delicious)
Hold the pasta! Spaghetti squash is roasted to a toothsome sweetness and baked with chicken pieces, marinara sauce and mozzarella, for a healthy yet satisfying version of the Italian classic.
6. Thai butternut squash curry (h/t Little Spice Jar)
Mmm...a bowl of this creamy, warming and spicy curry will chase away a bad day in minutes. Crushed cashews, cilantro and lime wedges add a real brightness to the slightly sweet, coconut-based curry, and it's surprisingly good served cold with a naan bread and a handful of rocket for lunch at work the next day!
7. Slow cooker butternut squash and lentil curry (h/t Sweetpeas and Saffron)
Another curry, but this is a dal-style one that you can make in the crock pot! Lots of flavor here - lentils, garam masala, cumin and golden turmeric simmer away with the squash for a hearty Indian feast that takes literally minutes to throw together. Just imagine coming home from work to find these gloriously spicy aromas waiting for you...
