Southern sweet potato casserole

Mmm, sweet potato casserole. I don't know a soul who doesn't think it's one of the tastiest, sweetest things that could ever land on your table. I know, it's one of those things that usually only ends up on the holiday table (at least around my parts), but I look forward to it each and every year. I always dot the top of mine with marshmallows, as in the recipe below, but I know plenty of people who don't and I can tell you, it's just as good!
I love the sweet potatoes mixed together with eggs that give it a little rise, baking spices, and of course, lots of butter! But other than the marshmallows, I have to say, I think it might be that crispy, crunchy topping that gets me every time. It gives much-needed texture to the sweet potatoes and, who doesn't love pecans? They're delicious, and they're absolutely divine in that topping! If you haven't made sweet potato casserole, I don't know what you're waiting for!

Southern Sweet Potato Casserole

6 medium sweet potatoes, peeled and cut into chunks
2 cups brown sugar, divided
12 tablespoons butter, softened, divided
1 1/2 teaspoons vanilla extract
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 cup heavy cream
2 eggs, lightly beaten
1/2 cup all-purpose flour
1 cup pecans, chopped
1 cup mini marshmallows
Preheat oven to 350 degrees Fahrenheit. Place sweet potatoes in a large saucepan, and bring to a boil over high heat. Reduce heat to medium and gently boil until sweet potatoes are soft. Drain.
Place sweet potatoes in a large bowl and mash with a potato masher. Add 1 cup brown sugar, 8 tablespoons butter, vanilla extract, cinnamon, nutmeg, cream, and eggs. Stir everything together very well and pour into an 8" x 8" baking dish.
In a medium-sized bowl place flour, pecans, 1 cup brown sugar, and 4 tablespoons of softened butter. Using your hands, work everything together so it is all evenly combined. Crumble over top of the sweet potato mixture.
Place in the preheated oven and bake for 20 minutes. Then remove from oven, place marshmallows on top, and return to oven for another 10 minutes.
