1/3 pound bacon
1 tablespoon maple syrup
3 cups flour
1-1/2 tablespoons baking powder
1-1/2 teaspoons salt
1/2 teaspoon black pepper.
1 teaspoon baking soda
1-1/2 sticks very cold butter, cubed
6 ounces sharp orange cheddar cheese, grated
1/3 cup chopped chives
1 cup buttermilk
Preheat the oven to 425 degrees F.
Place the bacon on a rack set over a baking sheet. Bake for 15 minutes until almost cooked, drizzle with the maple syrup and continue baking until crisp, about 10 more minutes. Set aside to cool.
Whisk all of the dry ingredients together in a bowl.
Add the butter and use a pastry cutter (or two knives) to cut the butter into the flour mixture. Add the cheddar and chives.
Crumble the bacon into small bits, and add to the mixture.
Drizzle in the buttermilk and stir until the mixture is just combined.
Drop the biscuits onto a baking sheet, making sure to leave them room to spread. Bake for 15 to 20 minutes, or until golden brown.
