In this recipe, sausage meat is taken out of the casing, seasoned just a touch and formed into patties. After a quick fry for both the patties and the peppers, everything gets topped onto slider buns for a handheld Italian treat. It's so easy to bring together. 1-1/2 pounds Italian sausage, casings removed
1/2 teaspoon salt
1/2 teaspoon ground black pepper
4 tablespoons olive oil, divided
1/2 green bell pepper, sliced
1/2 red bell pepper, sliced
1/2 onion, sliced
3 cloves garlic, minced
1 cup tomato sauce
10 slider rolls
Place the sausage meat into a large bowl and season with salt and pepper. Form into small patties about 1/4 inch thick and approximately 2 inches in diameter. Set aside.
In a medium-sized skillet, heat 2 tablespoons of olive oil over medium heat.
Add the green and red bell pepper and the onion slices and cook for about 5 minutes, until the peppers are just starting to soften.
Add the garlic, toss and cook for another minute. Add the tomato sauce, turn heat down to low and allow to simmer so the sauce can reduce slightly.
While the peppers and onions cook, heat the remaining two tablespoons of olive in a separate nonstick skillet.
Add the sausage patties and cook for about 4 minutes per side. Cook patties in batches if necessary so you don't overcrowd the pan. As you remove one batch, place it in an oven on low heat to keep warm and cook remaining batches.
When all the patties have been cooked, the peppers are soft and the sauce has reduced, place one sausage patty on half of a slider bun.
Top with the peppers and sauce mixture before placing the other half on the slider bun.
