There's nothing I love more than a good, juicy burger. Unless it’s a juicy low-carb burger that’s loaded feta cheese. These are bursting with flavor because they're loaded with cheese and authentic Greek seasonings. This recipe is perfect for your next cook-out, but it also makes an easy weeknight meal.
I love how these burgers sneak in a hearty dose of vegetables in a way that hardly anyone will notice. The spinach not only makes them good for you, but keeps them moist, too. Serve these wrapped up in lettuce leaves with whatever burger fixings you like and everyone will leave the table satisfied.

Low-Carb Spinach and Feta Burgers

1 ¼ pounds lean ground beef or lamb
1 (10-ounce) package frozen chopped spinach, thawed and squeezed dry
¼ cup crumbled feta cheese
1 tablespoon minced fresh oregano leaves or 1 teaspoon dried oregano
1 garlic clove, minced
¼ teaspoon ground black pepper
2 tomato slices
4 large or 8 smaller lettuce leaves, for wrapping
Thinly sliced red onion, for garnish
Thinly sliced cucumbers, for garnish
Plain yogurt or sour cream, for garnish
Chopped fresh herbs (parsley, mint, dill, or a combination), for garnish
In a bowl mix the meat, spinach, cheese, oregano, garlic, salt, and pepper with your hands until thoroughly combined. Form the mixture into 4 patties, each about 4 inches across.
Heat a skillet or grill pan over medium-high heat and cook until the burgers are cooked to your desired doneness, about 4 minutes per side for medium.
Serve the burgers with lettuce leaves for wrapping and topped with sliced tomatoes, red onion, cucumber, a dollop of plain yogurt or sour cream, and a sprinkling of fresh herbs.
