Smoked Salmon Gnocchi Casserole

2 cups heavy cream
1/2 cup Parmesan cheese, shredded
1/2 cup baby spinach, chopped
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 package (800 grams) fresh gnocchi, cooked according to package directions
1 cup smoked salmon, thinly sliced
Preheat the oven to 350 degrees Fahrenheit and grease a shallow baking dish.
In a medium saucepan heat heavy cream to a simmer. Add Parmesan cheese, stir, and continue cooking until the cheese is melted. Add spinach and allow it to cook until melted. Season with salt and pepper and stir.
Place the cooked gnocchi in the bottom of the baking dish. Pour the cream sauce over top and place in the preheated oven. Bake for 15 to 20 minutes, until the sauce is bubbling.
Remove from oven and sprinkle with the smoked salmon before serving.
