Collard greens are a classic Southern side dish. Slowly braised and smothered with bacon and onions, these bitter greens become rich and savory. In the recipe below, you combine them with braised cabbage for a dish that's a bit mellower and totally delicious.
This dish is an excellent side to other classic Southern comfort food dishes. Serve these collard greens with fried chicken, and be sure to bake up your favorite cornbread recipe to sop up all those yummy juices.

Southern Collard Greens with Cabbage

Ingredients
1/4 pound bacon, chopped
1 onion, sliced
3 garlic cloves, minced
1 ham hock
4 bunches collard greens, cleaned and sliced
1 head green cabbage, cored and sliced
Salt and pepper
Directions
1. Heat the bacon in a large stockpot until crispy. Add the onion and sauté for about 5 minutes, then add the garlic cloves. Sauté 1 minute.
2. Add the ham hock, then add enough water to cover. Season with salt and pepper, and cook for 1 hour.
3. Add the collards to the pot and cook for another hour.
4. Add the green cabbage and cook for an additional 5 minutes.

5. Remove the ham hocks from the pot. Remove the bones and fat. Return the meat to the pot, stir to combine, and season with salt and pepper if needed. Serve.
