4 cucumbers
1 teaspoon kosher salt
3/4 cup sour cream
1/4 cup crème fraiche
1 tablespoon sugar
2 tablespoons white vinegar
2 tablespoons chopped fresh dill
2 tablespoons chopped fresh parsley
1/2 teaspoon ground black pepper
Halve the cucumbers lengthwise and scoop out the seeds. Cut into 1/2-inch slices.
Toss the cucumbers with the salt and set in a colander or strainer for 5 minutes while you prepare the dressing.
Whisk together the sour cream, crème fraiche, sugar, vinegar, dill, parsley and pepper.
Pat the cucumbers dry to remove any excess salt.
Toss with the dressing and serve immediately.
