How to make Vegetarian tomato and mozzarella quinoa burgers

Unlike some other veggie burgers, the recipe below gets a heaping helping of protein thanks to the quinoa base. Quinoa is a pseudo-grain that's rich in protein, making these burgers super filling. They get an added hit of flavor thanks to sundried tomatoes and herbs, not to mention a gooey mozzarella core – just be sure to not use too wet a mozzarella, which could make these burgers fall apart.
You can serve these burgers however you like: they're delicious on a bun with traditional toppings, but they're also yummy in a wrap or on their own with a side salad. A few shakes of hot sauce will liven them up nicely!

Quinoa Burgers

1 cup cooked quinoa
1 cup shredded mozzarella
2 sun-dried tomatoes, minced
2 eggs
4 tablespoons flour
1 clove garlic, minced
1 tablespoon chopped chives
1 tablespoon chopped parsley
1/2 teaspoon salt
1/2 teaspoon pepper
2 tablespoons vegetable oil
4 burger buns
4 rings red onion
4 slices tomato
4 slices avocado
Combine all of the ingredients except for the oil in a bowl. Mix well to combine. Divide into four portions, and pack together into patties. Set on a greased plate and chill for 15 minutes or up to overnight.
When ready to cook, heat the oil in a frying pan over medium heat. Cook the patties for 3-4 minutes per side, until they are golden brown and crisp.
Serve the burgers on the buns with onion, tomato, and avocado.
