I love pie of any kind, but there I consider to be favorites. And this Southern blueberry buttermilk pie in the recipe below is at the top of the list. What I love most about this pie is that it's more like a pudding pie because it has a soft custardy filling. And that filling is delicious, too.
Aside from the taste and texture, I also love how incredibly easy this pie is to make. The pie crust is a refrigerated pie crust and you can use frozen blueberries that are just as tasty and even more affordable. And, since the filling is my favorite part of making any pie and that's all there is left, it truly is a joy to make, as well as eat!

Southern Blueberry Buttermilk Pie

2 cups frozen blueberries
1/2 cup white sugar
1 tablespoon lemon juice
1 cup buttermilk
3 eggs
1 teaspoon vanilla extract
1/2 teaspoon salt
1/4 cup flour
2 tablespoons butter, softened
1 refrigerated pie crust
Preheat oven to 350 degrees Fahrenheit.
Place blueberries in a bowl and add white sugar and lemon juice. Stir and set aside.
In a separate bowl mix together the buttermilk, eggs, vanilla extract, salt, flour, and butter.
Using a fork, poke holes in the bottom of the pie crust. Then place blueberries in the bottom of the pie crust. Pour buttermilk mixture over the blueberries.
Place the pie in the preheated oven and bake for 40 - 50 minutes, until the top is golden brown.
