Chicken Parmesan is a favorite in my house, but I'll admit that it's sometimes a little heavy. All that pasta on top of the breaded chicken - it's certainly a warming winter dish! So, when the family was in the mood for chicken Parmesan but it was too hot outside, we thought: why not turn it into a burger! The recipe below nails it, capturing everything we love about the dish without all that heavy pasta.
If you want, you can bread chicken breasts and cook them in the oven (just like you would for the original dish). But, we like using ground chicken and turning them into patties instead. It makes this dish feel more like a burger and less like a chicken sandwich. When everything is said and done, you won't be disappointed: this chicken patty has all the flavors you love of chicken Parmesan.

How to make Chicken parmesan burgers

1 pound ground chicken
1/2 cup Italian seasoned breadcrumbs
1/4 cup grated Parmesan cheese
1/4 teaspoon garlic powder
1 teaspoon Italian seasoning
1 tablespoon olive oil
1 cup marinara sauce
4 slices mozzarella cheese
4 sesame seed buns
4 leaves basil, thinly sliced
In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, garlic powder, and Italian seasoning.
Form the burgers into 4 patties and make a hole in the center of each patty.
Heat the oil in a cast iron skillet over medium-high heat. Place the burgers in the skillet and cook for about 5 minutes, until the bottoms are golden brown.
Flip the patties and add the marinara sauce to the pan. Swirl the pan so the marinara coats the chicken burgers. Bring the mixture to a simmer.
Add a slice of mozzarella cheese to each chicken burger and reduce the heat to medium-low. Cover the pan and cook until the cheese is melted and the chicken patties reach 165 degrees F on an instant read thermometer, about 10 minutes.
Spoon some of the sauce onto the bottom bun and place a chicken patty on each bun. Top each bun with the remaining sauce and the thinly sliced basil leaves.
