Figuring out what to eat for dinner is a question we all struggle with from time to time. If you're a fan of the savory, melty flavors of a cheeseburger and also love tacos, you'll love this recipe below that combines both of these tasty meals into one dinner!
It might seem decadent to eat a double cheeseburger, but the patties only weigh a quarter pound each. You're really not eating that much meat when you think about it, but you get the benefit of each patty being perfectly grilled on the outside. If you really want to spice up these burgers, add some chopped jalapeños to the mix. These burgers are spicy enough between the salsa and the pepper jack cheese, but extra peppers will really kick things up a notch!

Tex-Mex double beef burgers
Servings: 4
Prep Time: 15 minutes
Cook Time: 10 minutes
Total Time: 25 minutes
Ingredients
2 pounds ground beef, preferably 80/20
Kosher salt and black pepper, to taste
8 slices pepper jack cheese
4 sesame seed buns
1/2 cup guacamole
1/4 cup of your favorite salsa
Directions
1. In a bowl, mix ground beef with salt and pepper.

Shape the ground beef into 8 patties.

Make a dimple in the center of each patty and season them with salt and pepper, to taste.

2. Heat your grill over medium-high heat. Place the burgers on the grill.

Cook for 8-10 minutes, flipping once, until they are cooked through.

If you're using a meat thermometer, aim for 140 degrees F for medium rare or 160 degrees F for well done.

3. When the burgers are almost fully cooked (about 5 degrees F off from the final cooking temperature), place the pepper jack cheese on top of each patty and close the lid to melt the cheese.

4. Assemble the burgers by stacking two patties on top of each other. Spread the guacamole on the bottom bun and top it with the two stacked patties for each burger.

Then top each burger with 1 tablespoon of the salsa and cover with a bun.
