1. Shredded chicken tacos
Shredded chicken is crazy easy to make in a slow cooker. It only requires two ingredients, chicken and stock, and doesn't take too long if you don't put too much chicken in it. Choose bone-in chicken so it can cook for a while without getting rubbery. Once you have shredded chicken, you can use it to make the tacos in the recipe below. You can also use it shredded chicken for salads, burritos, sandwiches or soup.
2. Cilantro lime chicken tacos
Because chicken is s a fairly tender and lean meat, if you don't choose the right cut it can get rubbery over a long cooking time. To prevent this, use either bone-in chicken breasts or chicken thighs with the skin still on, as in the recipe that follows. The skin will prevent the chicken from drying out while the bone will require a longer cooking time.
3. Pulled pork tacos
Pulled pork tacos are actually a very Mexican dish known as pork carnitas. They're not only easy to make but practical too. Using a slow cooker to cook the pork makes this a great meal for summer nights when you don't want to heat up the house. As the slow cooker gets to work, you can tend to all the delicious toppings that no taco, no matter the variety, is complete without.
4. Shredded beef tacos
Shredded beef tacos are a little chewier than the ground beef variety, letting you savor the taste of the spicy tomato sauce they cook in. For this recipe, it's best to use a tougher cut of meat that will work with a slow braise. You could use a chuck roast, but flank steak also works and will shred very nicely. Searing either before placing them into the slow cooker is entirely up to you.
5. Quinoa tacos
There's putting a twist on tacos, and then there's turning them on their head completely. The recipe that follows does the latter. This is a recipe that can make vegetarians truly rejoice because now they can have their tacos and eat them too. Quinoa steps in as a meat substitute to provide a kind of taco you may never have imagined.
