Turkey is delicious, and there's no reason to reserve it only for the holidays. Turkey can be a great switch from other proteins that typically appear on family tables, especially when prepared using the recipe that follows. And it's much easier to make than roasting an entire turkey.
In just a few simple steps cooked turkey is combined with rice, frozen vegetables, and a sauce made up of prepared cream soup. It all gets covered in cheese to make it just a tiny bit creamier before getting a quick bake in the oven. Clearly turkey isn't just for the holidays anymore!

How to Make Creamy Turkey Casserole

2 cups white rice, cooked
2 cups frozen mixed vegetables
2 cups turkey, cooked
2 10-ounce cans cream of chicken soup
1 cup mozzarella cheese, shredded
2 tablespoons fresh parsley, minced
Preheat oven to 400 degrees Fahrenheit and grease a 9" x 13" casserole dish.
In a large bowl combine all ingredients except parsley. Stir to incorporate all ingredients and then pour into the prepared casserole dish.
Cover the casserole dish with aluminum foil and place in the oven. Cook for 30 minutes before removing foil and cooking for another 10 minutes until cheese is melted.
Remove from oven and let casserole sit for 10 minutes. Sprinkle with parsley before serving.
