How to make Southern strawberry cobbler

When strawberry season is in full swing, it’s nearly impossible to resist the big flats of plump, sweet strawberries at the market. Here is a quick and easy strawberry recipe from the South.
A popular favorite, Southern strawberry cobbler has juicy red berries nestle under a fluffy, almost cake-like biscuit layer and a perfectly golden brown crust. Creating this recipe is simpler than you may think. In fact, trimming
and cutting the strawberries is literally the most difficult part of this recipe.

Once you have got the berries prepared, you can make the rest of this delicious dessert in just minutes. Mix the cut strawberries with ¼ cup of the sugar and lemon juice in an 8-inch square baking dish. In a separate medium bowl, stir together the flour, baking powder and 1 cup of the remaining sugar. Add the butter and cut it in with a pastry cutter or two knives until the mixture resembles a coarse meal. Stir in the milk until the dough comes together. Dollop the batter on top of the strawberries in the pan in large spoonfuls. Sprinkle the remaining tablespoon of sugar over the top.
Then pop it in the oven for 40 minutes in the oven until the topping is cooked through and golden brown on top.. Top this dessert with a dollop of sweetened whipped cream and you’ve basically got an inside out strawberry shortcake. Enjoy a little bit of strawberry heaven!

3 cups quartered strawberries
1 ¼ cups plus 1 tablespoon granulated sugar, divided
1 teaspoon freshly squeezed lemon juice
1 cup all-purpose flour
1 ½ teaspoons baking powder
½ teaspoon salt
½ cup (1 stick) cold unsalted butter, cut into small pieces
1 cup whole milk
Preheat the oven to 400ºF.
Toss the strawberries with ¼ cup of the sugar and lemon juice in an 8-inch square baking dish.
In a medium bowl, stir together the flour, baking powder, 1 cup of the remaining sugar. Add the butter and cut it in with a pastry cutter or two knives until the mixture resembles a coarse meal. Stir in the milk until the dough comes together.

Bake for 35 to 40 minutes, until the topping is cooked through and golden brown on top.
