The recipe that follows is everything you want it to be. It's hearty and filling yet light enough that it won't weigh you down. It's also chock-full of tons of tasty ingredients including chicken, bacon, spinach, and perhaps best of all, feta cheese. Orzo pasta gives it enough oomph to be a complete meal in itself, and it takes just minutes to bring it all together.
With a little bit of prep work the day before, you can have this casserole ready in as little as half an hour. Crisp the bacon, cook the chicken, you can even prepare the pasta and then just combine everything before it gets a quick cook in the oven. At the end of it all you'll get a wonderfully Mediterranean dish that will have everyone going back for seconds!

How to Make Bacon, Chicken, Spinach, and Feta Casserole

1/2 cup cream cheese, softened
1/2 cup Greek yogurt
1/4 cup mayo
1 tablespoon fresh parsley, roughly chopped
1 teaspoon dried oregano
3 cloves garlic, minced
1/2 teaspoon salt
3 cups chicken, cooked and cubed
3 strips bacon, cooked crisp and roughly chopped
1 10-ounce frozen spinach, thawed and squeezed dry
1 cup dried orzo pasta, cooked and drained
1 tomato, chopped in a small dice
3 tablespoons fresh chives, finely chopped
1 cup feta cheese, shredded or cubed
Preheat oven to 400 degrees Fahrenheit and grease a 4" x 4" casserole dish.
In a small bowl combine the cream cheese, Greek yogurt, mayo, parsley, oregano, garlic, and salt.
Place the cooked orzo in a large mixing bowl and combine with yogurt mixture. Mix well to coat.
Add the chicken, bacon, spinach, orzo pasta, tomato, and chives. Mix well and pour into prepared casserole dish.
Sprinkle feta cheese evenly over the entire casserole.
Place casserole dish into the preheated oven and bake for 25 minutes, or until cheese is just beginning to brown and the casserole is hot throughout.
