How to make everything bagel grilled cheese sandwich

We often pair bagels with cream cheese, but what about with cheddar? In the recipe below, a mashup of two American classics, an everything bagel is filled, not with cream cheese, but with a combo of cream cheese and cheddar. It is then griddled like a grilled cheese for the perfect sandwich.
This is the perfect jumping-off point to experiment with other versions of this sandwich. You could easily add chives or green onion to the cheese mixture for a bit more flavor, or you could add ham or pastrami to make it a bit more filling and hearty.

Everything Bagel Grilled Cheese

1 everything bagel
2 tablespoons cream cheese
2 ounces cheddar cheese, shredded
1 tablespoon butter
Halve the everything bagel and scoop out some of the crumb on both sides.
Combine the cream cheese and shredded cheddar, and spread in the hollow of the bagel. Put the two sides together.
Melt the butter in a pan over medium-low heat. Add the bagel and cook for 5 minutes per side, pressing down with a spatula to help the bagel stick together and to ensure that the cheese melts all the way through.
Remove from the pan, halve, and serve.
