How to make scrumptious, low-carb tuna melts

Tuna melts might be your ideal lunch, but if you're eating low carb, you may think you're out of luck. Happily, there's a way to enjoy this classic sandwich without all the carbs: on sweet potato toast. The recipe below will show you how.
To make this recipe perfect, slice your sweet potato into 1/2-inch slices, which will come out of the oven crisp on the outside and tender on the inside. Then top them with homemade tuna salad and a touch of cheese, and broil them to ooey-gooey perfection. Lunch is served!

Low-Carb Tuna Melts

1 sweet potato, peeled and cut into 4 1/2-inch slices from the widest part (reserve the rest for another recipe)
1 tablespoon vegetable oil
12 ounces tuna, canned in water, drained
1/2 cup mayonnaise
2 stalks celery, diced
1/4 white onion, diced
4 slices low-moisture mozzarella cheese
salt and pepper
Preheat the oven to 400 degrees.
Brush the sweet potato slices with oil on both sides, place on a nonstick baking sheet, and roast for 20 minutes, flipping over halfway through the cooking.
Meanwhile, combine the tuna, mayonnaise, celery and onion in a bowl. Season to taste with salt and pepper.
When the sweet potatoes come out of the oven, preheat the broiler. Mound the tuna on the sweet potatoes and top with cheese. Broil for 5 minutes, or until bubbly.
