These low carb tuna pickle boats are not only incredibly delicious, they're also a super cute way to serve a beloved lunchtime sandwich. In the recipe that follows, all you have to do is make a simple tuna salad (without pickles, unless you really love them!) and then stuff them into pickle boats. It's so easy and tuna and pickles really are best friends so it's a match made in heaven.
Those pickle boats are really easy to make, too. You just have to slice a pickle in half, scoop out the seeds, and there you have it. You just made a pickle boat! You do want to use relatively large pickles, so you can get all that tasty tuna inside. But if you can only find small ones, just use those and eat more of them!

How to Make Low Carb Tuna Pickle Boats

1 5-ounce can of tuna, drained
1/4 cup mayonnaise
1 celery stalk, finely chopped
1 teaspoon onion, minced
1 teaspoon lemon juice
1 teaspoon dried dill
1/4 teaspoon salt
1/4 teaspoon black pepper
4 large dill pickles
Flake the tuna into a medium-sized bowl.
Add mayonnaise, celery, onion, lemon juice, dill, salt, and black pepper. Stir well to incorporate all ingredients.
Slice each pickle in half. Using a spoon, carefully scoop out the seeds being careful not to break the sides of the pickle.
Spoon a little bit of the tuna mixture into each dill pickle.
