Southern Style Brown Sugar Baked Beans

Ingredients
½ onion, diced
2 (15-ounce) cans white beans (such as navy beans), drained and rinsed
1/3 cup brown sugar
2 tablespoons molasses
1 ½ teaspoons Dijon or other spicy mustard
Kosher salt
Freshly ground black pepper
6 to 8 slices thick cut bacon, diced
Directions
1. Preheat oven to 350 degrees F.
2. Heat large saucepan over medium-high heat. Add the bacon and cook, stirring, until the pieces are browned and crisp. Add the onion and cook, stirring frequently, until the onion is softened, about 4 more minutes.

3. In a large bowl, combine the cooked onions and bacon with the beans, brown sugar, molasses, mustard, and salt and pepper. Stir to mix well and then spread the mixture into an even layer in a backing dish.
4. Bake in the preheated oven for 1 to 1 ½ hours until the whole thing is bubbling hot.
