Slow Cooker Hawaiian Chicken

½ pineapple, cut into 1-inch cubes (about 2 cups cubed)
1 onion, diced
2 pounds skinless, bone-in chicken thighs
½ cup brown sugar
3 tablespoons honey
2 tablespoons soy sauce
1 tablespoon grated fresh ginger
2 garlic cloves, minced
1 tablespoon cornstarch
1 red bell pepper, seeded and diced
Toss the pineapple and onion together in the slow cooker. Place the chicken on top.
In a mixing bowl, stir together the brown sugar, honey, soy sauce, ginger and garlic. Pour the mixture over the chicken.
Cover and cook for 6 hours on low or for 3 hours on high.
In a small bowl, stir the cornstarch with 1 tablespoon of water and then add it to the slow cooker along with the bell pepper. Cover again and let cook for 30 minutes more.
