This slow-cooker Hawaiian chicken recipe takes just 10 mins to prep

This time of year — back to school — it seems like making dinner for a family gets even harder than usual. The recipe below is a scrumptious solution. It’s a one-pot dinner made in the slow cooker, so it can be ready for you when you get home at the end of the day.
The best part about this dinner is that kids love it. Juicy chunks of pineapple make it sweet and delectable. The pineapple also serves as a tenderizer for chicken, so the meat turns out moist and succulent. Serve it with steamed white or brown rice for an easy back-to-school meal.

Slow Cooker Hawaiian Chicken

½ pineapple, cut into 1-inch cubes (about 2 cups cubed)
1 onion, diced
2 pounds skinless, bone-in chicken thighs
½ cup brown sugar
3 tablespoons honey
2 tablespoons soy sauce
1 tablespoon grated fresh ginger
2 garlic cloves, minced
1 tablespoon cornstarch
1 red bell pepper, seeded and diced
Toss the pineapple and onion together in the slow cooker. Place the chicken on top.
In a mixing bowl, stir together the brown sugar, honey, soy sauce, ginger and garlic. Pour the mixture over the chicken.
Cover and cook for 6 hours on low or for 3 hours on high.
In a small bowl, stir the cornstarch with 1 tablespoon of water and then add it to the slow cooker along with the bell pepper. Cover again and let cook for 30 minutes more.
