If you’re anything like me, you probably cook chicken in your slow cooker at least once a week. Chicken is easy, healthy, and affordable, so of course it is a standard go to protein. But you know as well as I do that it can get really boring. The recipe below is a great, easy way to change things up.
Adding sweet potatoes and black beans boosts the nutrition profile of this slow cooker meal. It also adds a whole lot of color, which just makes me happy. A few spices and a bunch of salsa — use hot, medium, or mild— add the perfect kick.

Slow Cooker Latin Chicken

3 pounds skinless, bone-in chicken thighs
Salt
Freshly ground black pepper
2 large sweet potatoes, cut into chunks
2 (15-ounce) cans black beans, rinsed and drained
1/2 cup water
1 cup salsa
1 tablespoon chile powder
2 teaspoons ground cumin
½ teaspoon smoked paprika
3 large cloves garlic, chopped
1/4 cup chopped cilantro
Season the chicken with salt and pepper, and put it in the slow cooker. Top with the sweet potatoes and black beans.
In a mixing bowl, stir together the water, salsa, cumin, and garlic. Pour the mixture into the slow cooker. Cover and cook on low for six hours.
Serve hot, garnished with cilantro.
