Christmas morning can be a chaotic time, especially if you have little kids. In most households, breakfast is an afterthought on Christmas morning. It doesn’t have to be, though.
Here are some easy casserole recipes that are bound to save you some time this holiday season.
Denver breakfast casserole
The Denver omelet is a classic. Green bell peppers, cubed ham and onions all wrapped in velvety eggs — there's little better to indulge in during a chaotic Christmas morning, However, omelets sometimes come with problems. They don't always turn out or flip properly, and they're a dish that requires time standing over a stove. But not this recipe.

This is a classic "dump and bake" casserole that you can toss in the oven and an hour later be enjoying a delicious Denver omelet. It's even a complete breakfast with hash browns that are baked right in. So you can keep the deliciousness of Christmas morning but lose the chaos. Watch how easy it is in this video.
Ham and cheese croissant casserole
Ham and cheese on a flaky croissant makes a mighty fine breakfast, but you know what makes an even better one? Turning those ingredients into a savory bread pudding. This easy recipe combines buttery croissants, salty ham, and flavorful cheese baked in a rich egg custard for a Christmas brunch dish that is pure genius.

This is a great way to use up leftover croissants that are going stale, but it's worth making a special trip to the bakery for them, too (buy the day-old ones and save a bit of money!) Give this video a watch before you start cooking.
Caramel pecan French toast bake
Is there anything better than a great piece of french toast for breakfast? The eggy bread can be personalized with a variety of different spices and toppings with an endless array of different options. You'll have lots of time to decide because this casserole is so easy to make.

Bacon, egg and cheese biscuit casserole
This casserole recipe is one of our absolute favorite ways to serve biscuits, mainly because it's just as tasty with day-old biscuits as with fresh ones. While the recipe below incorporates cheddar cheese into the dough, you can just as easily make it with plain biscuits.

This is one of our favorite ways to serve brunch to a crowd. It's easy to prepare in advance, so you just pop it in the oven a bit under an hour before you're ready to serve it. Check out how easy it is by watching this video.
Overnight pancake casseroleBe a whole night ahead of the Christmas game when you make an overnight pancake casserole. Frozen pancakes are used in this casserole. And the frozen ones hold up just fine overnight and in the oven.

In the morning all I have to do then is crumble that delicious streusel topping over top and pop them in the oven. When a delicious pancake breakfast is as easy to make as this, I enjoy eating them as much as the kids! Check out this video.
Blueberry french toast casserole
French toast is an ultimate comfort food. I associate French toast with lazy Saturday mornings when you stay in your pajamas for way too long. As kids, whenever Mom made French toast, we knew it was going to be the start of a fun weekend. Recreate this magic as Christmas.
Cooktop Cove
I love this blueberry French toast casserole because it's both delicious and easy to make. It takes only 5 minutes to prepare, (as you will see in the video below) and then you throw it in the oven and wait for the casserole to be finished. For an extra treat, after baking, pour maple syrup over the top!
Cinnamon apple pancake casseroleThe best part of making the recipe below is watching it puff up nice and golden in the oven. But it tastes pretty darned good, too. Apples are lightly sautéed before a sweet and smooth batter gets poured over top of them and it all goes into the oven to bake. A little bit of powdered sugar on top when it's ready to eat and it's all the goodness of pancakes and apple pie all in one.

The pancake will start to deflate as soon as it comes out of the oven, but that won't detract from the taste anyway. It's light and fluffy with bits of tender apples spread throughout. And you can't forget about the sweet and spicy aroma of cinnamon that waft through it - and through your house as it's baking! A perfect scent for Christmas morning. It doesn't take that long to pull together either, making it the perfect breakfast dish. Watch this video below to see how it's done.
