These keto cucumber bites are super easy to make and packable for any lunch

If you’re anything like me, you struggle to keep your ketogenic lunches—especially when you have to make them for the office—interesting and satisfying. The recipe below is one of my favorites. It’s perfect for making the night before and packing for a workday lunch.
Since these are made into little “bites” they make ideal finger food. They’re great for taking outside to a park bench if you have the luxury of being outdoors, or if you don’t, munching right at your desk while you tackle your emails. For a bit of extra crunch, sprinkle some chopped toasted almonds or walnuts over the tops.

Keto Cucumber Bites

8 ounces cream cheese, at room temperature
1 tablespoon finely diced bell pepper
1 tablespoon minced fresh dill, and additional dill for garnish
1 tablespoon finely chopped chives
Freshly ground black pepper
1 large English cucumber, halved lengthwise and seeds scooped out with a spoon
In a medium mixing bowl, combine the cream cheese, bell pepper, dill, chives, and pepper and stir to mix well.
Spoon the cream cheese mixture into the cucumber halves, filling evenly. Cut each cucumber half into 1-inch-thick crescents. Cover and refrigerate until ready to serve. Serve chilled, garnished with dill.
