Low Carb Cucumber Roll-Ups with Greek Yogurt

4 ounces crumbled feta cheese
1/4 cup Greek yogurt
2 tablespoons chopped Kalamata olives
2 tablespoons finely diced red bell pepper
2 tablespoons finely diced red onion
1 tablespoon chopped fresh oregano
2 teaspoons lemon juice
Freshly ground black pepper
2 large cucumbers, trimmed and cut lengthwise into thin strips
In a bowl, stir together the cheese, yogurt, olives, peppers, onion, oregano, lemon juice, and pepper.
Spoon the mixture onto the cucumber slices, spreading into an even layer. Roll the cucumber slices up like pinwheels. Serve immediately or refrigerate until ready to serve.
