How to make low-carb salmon cucumber rolls

Print this recipe
Smoked salmon is kind of a wonder food. It works for breakfast, brunch, lunch, dinner, fancy appetizers, and quick snacks. It’s also full of healthy fats and good protein. The recipe below showcases smoked salmon in a dish that is equally versatile — I’ve served these pretty little roll-ups for everything from breakfast to cocktail hour.
The filling mixture here is a simple mix of smoked fish, cream cheese, and fresh lemon juice and dill. You can dress it up by adding capers, finely diced red onion, or minced chives if you want. Garnish the platter with sprigs of fresh dill to make it presentation ready.

15 minutes
8 ounces cream cheese, at room temperature
4 ounces smoked salmon
1 tablespoon freshly squeezed lemon juice
1 tablespoon minced fresh dill
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground pepper
1 English cucumber, thinly sliced lengthwise
In a mixing bowl, combine the cream cheese, salmon, lemon juice, dill, salt and pepper, and stir to mix well.
Lay the cucumber slices flat on a work surface, and spoon the salmon mixture on top, spreading evenly to cover each cucumber slice in an even layer. Roll the cucumber slices up into pinwheels, and arrange them on a serving platter. Once all of the slices have been filled and rolled, cover the platter and refrigerate until ready to serve.
