8 ounces cream cheese, at room temperature
4 ounces smoked salmon
1 tablespoon freshly squeezed lemon juice
1 tablespoon minced fresh dill
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground pepper
1 English cucumber, thinly sliced lengthwise
In a mixing bowl, combine the cream cheese, salmon, lemon juice, dill, salt and pepper, and stir to mix well.
Lay the cucumber slices flat on a work surface, and spoon the salmon mixture on top, spreading evenly to cover each cucumber slice in an even layer. Roll the cucumber slices up into pinwheels, and arrange them on a serving platter. Once all of the slices have been filled and rolled, cover the platter and refrigerate until ready to serve.
