How to make vegan banana chocolate chip cookies

I started eating vegan because I believe it is healthy. I feel better when I don’t eat meat or animal products. But just because I want to live a healthy lifestyle doesn’t mean I don’t still want a treat now and then. The recipe that follows is perfect for that sweet tooth.
This recipe is the vegan answer to the basic chocolate chip cookie. It is sweet and chocolatey, but totally free of animal products. Serve them with a tall cold glass of nut milk and you will be a hero.

Vegan Banana Chocolate Chip Cookies

1 ripe banana, mashed
1/2 cup sugar
1/4 cup coconut oil, at room temperature
1 teaspoon vanilla extract
1 cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup vegan chocolate chips
Preheat the oven to 350 degrees F. Line a large baking sheet with parchment paper.
In a large mixing bowl, combine the banana, sugar, coconut oil and vanilla, and stir to combine well.
Add the flour, baking soda and salt. Stir to mix well.
Fold in the chocolate chips.
Drop the dough by onto the prepared baking sheet, pressing with the back of the spoon to flatten out the dough.
Bake for 10 to 12 minutes.
Let cool on the baking sheet for a couple of minutes before transferring to a wire rack to cool completely.
