4 kale leaves, washed and chopped
4 avocados, peeled, quartered, and pitted
2 limes
1 teaspoon salt
1 small red onion, brunoise
1 small tomato, brunoise
1 small jalapeño, brunoise
1/4 cup cilantro, roughly chopped
Combine the kale leaves, avocados, lime juice, and salt in a food processor. Process until just smooth. Transfer to a bowl.
Add the onion, tomato, jalapeño, and cilantro. Stir until just combined.
Serve as soon as possible to keep it from oxidizing.
