This meatloaf is stuffed with cheese and bacon just like your favorite burger. And the best thing is, it cooks in the slow cooker while you are at work so you can come home to a magical meal that’s ready to devour.
For a fun serving idea, top this meatloaf with shredded lettuce, diced tomatoes, chopped pickles, and any other toppings you like on a luscious cheeseburger. Serve extra ketchup on the side, too, if your family likes a saucy burger. You can also replace the ketchup (both inside and on top of the meatloaf) with barbecue sauce if you prefer.

Slow cooker bacon cheeseburger meatloaf

Ingredients
6 strips bacon
2 pounds ground beef
2 large eggs
1 onion, diced
1 garlic clove, minced
¾ cup panko breadcrumbs
1 ½ teaspoons kosher salt
½ teaspoon freshly ground black pepper
1 cup ketchup, divided
2 cups shredded Cheddar cheese

1. In a skillet over medium-high heat, cook the bacon until lightly browned on both sides.

Transfer to a paper towel-lined plate. Once cooled, crumble.

2. In a large mixing bowl, combine the beef, eggs, onion, garlic, breadcrumbs, salt, pepper, ½ cup of the ketchup, and half the bacon. Mix well and then transfer the mixture to a piece of waxed paper or parchment paper. Pat the mixture out into a large rectangle.

Sprinkle the cheese over the top, leaving a border of about 1/2 inch around the edge.

Sprinkle the remaining bacon over the cheese.

3. Starting with one of the short sides of the rectangle, roll the meat up around the cheese and bacon, jelly roll style.

Press the ends together to seal the filling inside. Transfer to the slow cooker.

Spread the remaining 1/2 cup of ketchup over the top.

4. Cover and cook on low for 8 hours or high for 4 hours.
5. Let rest for about 5 minutes before slicing and serving.
