Slow cooker meatloaf is a dream come true. With only a few minutes needed to put it together, you can set the slow cooker up in the morning before work and come home to a flavorful meatloaf, hot and ready to eat. The slow cooker keeps the meat around the edges from becoming overcooked and dry, and the whole thing comes out perfectly cooked.
You can even cook potatoes in the same pot at the same time to find an even better meal at home. Wrap potatoes in foil and set them in the slow cooker on top of the meatloaf. They’ll come out perfectly tender.

Ingredients
2 pounds ground beef
3 large eggs
1 onion, diced
1 garlic clove, minced
1 green bell pepper, diced
1/2 cup ketchup
1/4 cup milk
1/2 cup panko bread crumbs
1-1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1/2 cup brown gravy
1 teaspoon parsley
Directions
1. In a large mixing bowl, combine the ground beef, eggs, onion, garlic, bell pepper, ketchup, panko bread cumbs, milk, and salt and pepper. Mix well.
2. Form the meat mixture into a loaf shape in the slow cooker.
3. Cover and cook on low for 8 hours or on high for 4 hours.

4. Remove from the slow cooker and let stand for 10 minutes before slicing.
5. Drizzle brown gravy on top, and garnish with parsley.
Serve hot.
