Meatloaf is one of those dishes that turns out even better when cooked in a slow cooker. This cooking method prevents the meat from drying out and overcooking at the edges, keeping all the juice and flavors inside. The recipe below uses ground turkey instead of a fattier meat, so it’s lower in both fat and calories but every bit as delicious.
This simple recipe is easy to dress up any way you like. Try serving it with turkey gravy and a side of mashed potatoes. Or make it a Southwestern meatloaf by adding diced bell peppers, jalapeño and corn kernels. Add Cajun flair with diced peppers, celery and a few dashes of Cajun seasoning. The possibilities are endless.

Slow Cooker Turkey Meatloaf

2 pounds ground turkey
2 large eggs
1 onion, diced
1 garlic clove, minced
2 tablespoons Worcestershire sauce
¾ cup panko bread crumbs
1 ½ teaspoons kosher salt
½ teaspoon freshly ground black pepper
In a large mixing bowl, combine the turkey, eggs, onion, garlic, Worcestershire sauce, breadcrumbs, salt and pepper. Mix well.
Form the meat mixture into a loaf shape in the slow cooker.
Cover and cook on low for 8 hours or on high for 4 hours. Remove from the slow cooker and let stand for 5 minutes before slicing and serving.
