One of the biggest challenges of a low-carb diet is trying to find something to satisfy the craving for crunchy, salty snacks. The recipe below hits the mark every time. These crispy, crunchy, salty, spicy snacks are perfect for munching on their own or using to scoop up dips like guacamole or salsa.
You can use any type of hard cheese for this that you like. A good sharp or extra-sharp cheddar provides flavor match for the spicy jalapeno, but you could substitute a jack cheese or any other shred-able cheese you like. However you make them, they’re guaranteed to disappear fast.

Jalapeno cheddar crisps

1 jalapeno pepper, seeded and sliced into thin rings
1 cup shredded sharp cheddar
Preheat the oven to 350 F, and line a baking sheet with parchment paper.
Using a tablespoon to measure, make 16 piles of cheese on the prepared baking sheet. Flatten the piles out, leaving about 1 inch between them
Top each mound with a jalapeno ring.
Bake for 12 minutes, or until the rounds are nicely browned.
Remove the pan from the oven, but let the crisps rest on the pan for a couple of minutes to firm up before transferring them to a serving platter.
Serve immediately.
